Heat half the oil in a large pan on medium heat. Add the chicken to the pan and cook it for 5 minutes. Rotate once. Transfer the cooked chicken to a serving plate. Pour the rest of the oil into the pan. Stirring constantly, combine the onion with the bacon. Cook for 5 minutes or until the bacon has browned and the onion is softened. Garlic can be added to the mixture. Stirring constantly, cook for 30 seconds or until aromatic. Place about one-fourth the bacon mixture in a bowl. Cover the bowl to keep it warm.
Return the chicken back to the pan, along with the stock, cream, parmesan, and 1 1/3 cups of water. Bring the water up to a rolling boil. Reduce the heat to medium. Covered, simmer for 10 minutes or until the chicken is cooked and the sauce is thickened. Add the spinach and peas. Cook for 1 to 2 minutes or until the spinach is cooked. Mix in the lemon peel after removing the pan from heat. Salt and pepper your food to taste. Serve the remaining bacon with your favorite crusty loaf.

Tequila Sunrise Cocktail

Making some delicious, simple cocktails with your friends is a great way to start the year. If it is cold where you live, this recipe will remind you of warmer weather. You can also use a cocktail kit if you don’t want to buy a lot of ingredients to make your own drink. This Tequila Sunrise will impress you in either case.

Ingredients:

  • 2 tsp of grenadine
  • Ice
  • Tequila 1 1/2 ounce
  • 1 tbsp Triple Sec
  • Juice 1 large orange or 2 smaller ones
  • Juice of 1/2 lemon
  • 1 cocktail cherry

A cocktail shaker, and a tall drink glass are also required.
